Instructions

  1. Preheat your oven to 400°F (200°C). Lightly grease a baking sheet or a cast-iron skillet.
  2. In a large mixing bowl, whisk together the all-purpose flour, baking powder, and salt until well combined.
  3. Gradually add the water and melted butter to the dry ingredients, mixing with a wooden spoon or your hands until a soft, shaggy dough forms. Be careful not to overmix.
  4. If using, gently fold in the blueberries or raisins at this stage.
  5. Turn the dough out onto a lightly floured surface and knead briefly, just enough to bring it together into a cohesive ball. Do not overwork the dough.
  6. Form the dough into a round, flat disc, about 1-inch thick. You can also divide it into smaller individual rounds if preferred.
  7. Place the dough on the prepared baking sheet or in the cast-iron skillet.
  8. Bake for 20-25 minutes, or until the bannock is golden brown on top and sounds hollow when tapped. (Alternatively, you can fry it in a greased pan over medium heat for about 5-7 minutes per side until golden brown and cooked through).
  9. Remove from the oven and let cool slightly before slicing and serving. Bannock is delicious warm, plain, or with butter and jam.
