Immediately remove from heat and carefully whisk in 3 tablespoons of cold water. Set aside to cool slightly.

For the Cake Layers: In a large heatproof bowl set over a saucepan of simmering water (a double boiler), combine the 1 cup white sugar, 14 tablespoons sliced unsalted butter, and ¾ cup wildflower honey (for cake layers). Heat, stirring occasionally, until the butter is melted and the sugar is dissolved, about 5-7 minutes. Do not let the water in the bottom pan touch the bottom of the bowl.
  3. Add the baking soda, ground cinnamon, and fine salt to the honey mixture. Whisk vigorously for 1-2 minutes until the mixture foams up and lightens in color. This is crucial for the cake's texture.
  4. Remove the bowl from the heat. In a separate bowl, lightly beat the 6 large cold eggs. Gradually whisk the beaten eggs into the warm honey mixture, a little at a time, to temper them and prevent them from scrambling. Once all eggs are incorporated, return the bowl to the double boiler.
  5. Cook, stirring constantly, for another 5-7 minutes, until the mixture thickens slightly and has a custard-like consistency. Remove from heat and stir in the burnt honey prepared earlier. Gradually add the 3 ¾ cups all-purpose flour, mixing until just combined and a soft, sticky dough forms. Do not overmix.
  6. Cover the bowl with plastic wrap and refrigerate the dough for at least 1 hour, or until firm enough to handle.
  7. Preheat your oven to 350°F (175°C). Line several baking sheets with parchment paper. Divide the chilled dough into 8-10 equal portions (depending on desired layer thickness).
  8. On a lightly floured surface, roll out one portion of dough into a thin circle, about 9-10 inches in diameter. You can use a 9-inch plate or springform pan bottom as a guide to cut perfect circles. Place the dough circle on a prepared baking sheet. Gather any scraps and set aside.

  11. For the Frosting: In a large mixing bowl, combine the 4 cups cold heavy whipping cream and ¾ cup sour cream. Using an electric mixer, whip on medium-high speed until stiff peaks form. Be careful not to over-whip.
  12. Assembly: Place one cake layer on your serving plate or cake stand. Spread about ½ cup of frosting evenly over the layer. Repeat with the remaining cake layers, stacking them neatly. Once all layers are frosted, use the remaining frosting to cover the top and sides of the cake.
  13. Crumble the reserved cake trimmings into fine crumbs. Gently press the crumbs onto the top and sides of the cake. Cover the cake loosely and refrigerate for at least 8 hours, or preferably overnight, to allow the cake layers to soften and absorb the frosting.
