Instructions

  1. Cream butter, sugar, and lemon zest until light and fluffy, about 3 minutes.
  2. Beat in the egg, then mix in flour, baking powder, and salt until just combined.
  3. Gently fold in blueberries. Scoop onto parchment-lined baking sheets.
  4. Bake at 350°F (180°C) for 11–13 minutes until edges are lightly golden. Cool on the pan 5 minutes.
