Instructions

  1. For the Coconut Rice: Combine coconut milk, water, rinsed rice, sliced fresh ginger, ground ginger, bay leaf, and salt in a medium saucepan. Bring to a boil over medium-high heat, then reduce heat to low, cover, and simmer for 15-20 minutes, or until all liquid is absorbed and rice is tender. Fluff with a fork and set aside, keeping warm.
  2. For the Garnishes: Heat 1 cup vegetable oil in a wok or deep skillet over medium heat. Fry the raw peanuts until golden brown and crispy, about 3-5 minutes. Remove with a slotted spoon and drain on paper towels. Season lightly with salt. In the same oil, fry the washed anchovies until golden and crispy, about 2-3 minutes. Remove with a slotted spoon and drain on paper towels. Prepare hard-boiled eggs by halving them and slice the cucumber into rounds.
  3. For the Sambal: Drain the soaked dried chilies and blend them with garlic and 1/2 inch fresh ginger until a smooth paste forms. If using belacan, add it to the paste and blend. Heat 2 tablespoons vegetable oil in a clean pan or wok over medium heat. Add the sliced onion and sauté until softened and lightly caramelized, about 5-7 minutes. Add the chili paste mixture to the pan and cook over low to medium heat, stirring frequently, for 15-20 minutes, or until the oil separates from the paste and the sambal darkens. This process is crucial for flavor development.
  4. Stir in the tamarind paste mixture, sugar, and salt. Continue to cook for another 5-10 minutes, allowing the flavors to meld and the sauce to thicken slightly. Taste and adjust seasoning as needed.
  5. To Assemble Nasi Lemak: Serve a generous portion of fragrant coconut rice on a plate. Garnish with a spoonful of spicy sambal, a handful of crispy peanuts, fried anchovies, halved hard-boiled eggs, and fresh cucumber slices. Enjoy immediately.
