Norwegian Christmas Cabbage (Surkål)
This traditional Norwegian Christmas Cabbage, known as Surkål, is a delightful sweet and sour sauerkraut-like dish, beautifully spiced with caraway seeds and enriched with crispy bacon.
Instructions
- In a large, heavy-bottomed pot or Dutch oven, cook the bacon over medium heat until crispy. Remove the bacon with a slotted spoon and set aside, reserving the drippings in the pot.
- Add the shredded cabbage to the pot with the bacon drippings. Sauté over medium heat, stirring occasionally, until the cabbage begins to soften, about 10-15 minutes.
- Sprinkle the flour over the softened cabbage and stir well to coat. Cook for 1-2 minutes, allowing the flour to cook out.
- Stir in the caraway seeds, salt, and pepper. Then, pour in the white vinegar and add the white sugar. Stir everything together until well combined.
- Bring the mixture to a simmer, then reduce the heat to low, cover, and cook for an additional 15-20 minutes, or until the cabbage is very tender. Stir occasionally to prevent sticking.
- Taste and adjust the seasoning with more salt, pepper, vinegar, or sugar as desired.
- Crumble the reserved crispy bacon and stir it into the cabbage just before serving, or use it as a garnish on top of each serving.
