Polish Cherry Cake (Placek z Wiśniami)

Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan, or lightly grease with 1 tablespoon olive oil if preferred.
- In a large bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt. Set aside.
- In a separate large bowl, using an electric mixer, cream together the 1 cup of white sugar and the softened butter until light and fluffy.
- Beat in the ½ cup olive oil, eggs, and plain yogurt until well combined.
- Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Do not overmix.
- In a small bowl, gently toss the pitted fresh sweet cherries with the 1 tablespoon of white sugar.
- Fold the sugared cherries into the cake batter, distributing them evenly.
- Pour the batter into the prepared baking pan and spread evenly.
- Bake for 50-55 minutes, or until a wooden skewer inserted into the center of the cake comes out clean.
- Let the cake cool in the pan on a wire rack for at least 15 minutes before slicing and serving. Dust with powdered sugar if desired.
