Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan, or lightly grease with 1 tablespoon olive oil if preferred.
  2. In a large bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt. Set aside.
  3. In a separate large bowl, using an electric mixer, cream together the 1 cup of white sugar and the softened butter until light and fluffy.
  4. Beat in the ½ cup olive oil, eggs, and plain yogurt until well combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Do not overmix.
  6. In a small bowl, gently toss the pitted fresh sweet cherries with the 1 tablespoon of white sugar.
  7. Fold the sugared cherries into the cake batter, distributing them evenly.
  8. Pour the batter into the prepared baking pan and spread evenly.
  9. Bake for 50-55 minutes, or until a wooden skewer inserted into the center of the cake comes out clean.
  10. Let the cake cool in the pan on a wire rack for at least 15 minutes before slicing and serving. Dust with powdered sugar if desired.
