Authentic Swedish Pancakes (Pannkakor)

Instructions

  1. In a large bowl, whisk together the eggs until well combined.
  2. Gradually add the milk to the eggs, whisking constantly until smooth.
  3. In a separate bowl, combine the all-purpose flour, white sugar, and salt. Whisk these dry ingredients together.
  4. Slowly add the dry ingredients to the wet ingredients, whisking until the batter is smooth and free of lumps. Do not overmix.
  5. Heat a non-stick frying pan or crêpe pan over medium heat. Add about ½ teaspoon of butter to coat the bottom of the pan.
  6. Pour a small amount of batter (about ¼ cup) into the hot pan, tilting and swirling the pan quickly to spread the batter thinly and evenly over the entire surface.
  7. Cook for 1-2 minutes, or until the edges begin to crisp and the top looks set. Carefully flip the pancake with a spatula.
  8. Cook for another 30 seconds to 1 minute on the second side, until lightly golden.
  9. Slide the cooked pancake onto a plate. Repeat with the remaining batter, adding more butter to the pan as needed, stacking the finished pancakes.
  10. Serve immediately with your favorite toppings such as fresh berries, jam, or a sprinkle of powdered sugar.
