Beef and Beet Borscht

Instructions
- In a large pot or Dutch oven, combine the beef shank and 3 quarts of water. Bring to a boil, then reduce heat to low, cover, and simmer for 1 ½ to 2 hours, or until the beef is very tender. Skim off any foam that rises to the surface during the first 30 minutes of cooking.
- Carefully remove the beef shank from the pot, reserving the broth. Once cool enough to handle, remove the meat from the bone, shred it into bite-sized pieces, and set aside. Discard the bone.
- Add the chopped onion, carrots, celery, and bay leaf to the reserved beef broth. Bring to a simmer and cook for about 15 minutes, or until the vegetables begin to soften.
- Stir in the diced peeled beets and chopped cabbage. Continue to simmer for another 20-25 minutes, or until all the vegetables are tender.
- Return the shredded beef to the pot. Stir in the white vinegar, starting with a small amount and adding more to taste. Season generously with salt and ground black pepper.
- Ladle the hot borscht into bowls. Garnish each serving with a dollop of sour cream and a sprinkle of fresh dill before serving.
