Instructions
- Heat olive oil in a large pot or Dutch oven over medium heat. Add the sliced kielbasa and cook until browned and slightly crispy, about 5-7 minutes. Remove the kielbasa with a slotted spoon and set aside.
- Add the chopped onion, celery, and carrots to the pot with the remaining oil. Sauté until the vegetables begin to soften, about 5-7 minutes.
