Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add the sliced kielbasa and cook until browned and slightly crispy, about 5-7 minutes. Remove the kielbasa with a slotted spoon and set aside.
  2. Add the chopped onion, celery, and carrots to the pot with the remaining oil. Sauté until the vegetables begin to soften, about 5-7 minutes.
  3. Stir in the diced potatoes, chicken broth, water, salt, black pepper, and cayenne pepper. Bring the mixture to a boil, then reduce heat to low, cover, and simmer for 20-25 minutes, or until the potatoes are fork-tender.
  4. Return the cooked kielbasa to the pot. Stir in the diced dill pickle and pickle juice. Continue to simmer for another 5 minutes to allow the flavors to meld.
  5. Remove the soup from the heat and stir in the fresh chopped dill. Taste and adjust seasonings as needed.
