Instructions
- Roughly chop the scallions, Roma tomatoes, and fresh cilantro, including the stems for extra flavor.
- Peel and finely mince the 5 cloves of garlic.
- In a food processor, combine the chopped scallions, Roma tomatoes, cilantro, minced garlic, red wine vinegar, chili garlic sauce, olive oil, and garlic salt.
- Pulse the mixture until finely chopped but still chunky; avoid over-processing into a smooth paste. Alternatively, finely dice all ingredients by hand and mix in a bowl.
- Taste and adjust seasoning if necessary, adding more garlic salt or vinegar to your preference.
- Transfer the pebre to a serving bowl. For best flavor, let it sit for at least 15 minutes before serving to allow the flavors to meld. It can also be refrigerated for up to 3 days.
