Instructions

  1. In a large skillet or wok, cook the diced bacon over medium heat until crispy. Remove the bacon with a slotted spoon and set aside, leaving the rendered fat in the pan.
  2. Add the chopped kimchi to the skillet with the bacon fat and sauté for 3-5 minutes, stirring occasionally, until it softens and its flavors intensify.
  3. Add the cold leftover white rice to the skillet with the kimchi. Break up any clumps with your spatula and stir to combine thoroughly with the kimchi and bacon fat. Cook for 5-7 minutes, stirring occasionally, until the rice is heated through and slightly toasted.
  4. Drizzle the sesame oil over the rice and stir to incorporate. Add half of the chopped green onions and half of the toasted sesame seeds, stirring them into the fried rice.
  5. Divide the kimchi fried rice among four serving bowls. Top each serving with one of the cooked eggs (over easy, soft-boiled, or fried).
  6. Garnish each bowl with the remaining chopped green onions and toasted sesame seeds. Serve immediately.
