Sopa de Papas (Potato Soup)
Silky potato broth thickened with flour and served with cheesy, peppertopped round toasts.
Instructions
- Add one cup of mashed potatoes to one cup of stock, one cup of milk, a tablespoon of butter, salt, and one bay leaf.
- Thicken with a tablespoon of flour, cook thoroughly, and strain.
- Cut thinly sliced bread round into the size of a nickel, butter and toast them; make a little pile of grated yellow cheese on each toast, top with red sweet pepper and a pinch of chopped parsley. Serve hot with the soup.
