Air Fryer Wiener Schnitzel

Instructions
- Pat the veal scallopini dry. Place each piece between two sheets of plastic wrap and pound with a meat mallet to about ⅛-inch thickness. Sprinkle both sides with salt and ground black pepper.
- Set up a breading station: Place the flour in a shallow dish. In a second shallow dish, whisk the egg with 2 tablespoons of lemon juice. In a third shallow dish, combine the panko bread crumbs and chopped fresh parsley.
- Dredge each veal cutlet first in the flour, shaking off any excess. Then dip it into the egg wash, allowing any extra to drip off. Finally, press the cutlet firmly into the panko-parsley mixture, ensuring it's fully coated.
- Preheat your air fryer to 375°F (190°C) for 5 minutes. Lightly spray the air fryer basket with nonstick cooking spray.
- Working in batches if necessary to avoid overcrowding, place the breaded veal cutlets in the air fryer basket in a single layer. Lightly spray the tops of the cutlets with nonstick cooking spray.
- Air fry for 8-10 minutes, flipping halfway through, until golden brown and cooked through. The exact cooking time may vary depending on your air fryer model and the thickness of the schnitzel.
- Serve immediately with fresh lemon wedges for squeezing over the top.
