Fried Cauliflower (Egyptian Style)

Instructions
- Prepare the Cauliflower: Bring a large pot of salted water to a boil. Add the cauliflower florets and cook for 5-7 minutes, or until tender-crisp but not mushy. Drain well and spread on a clean kitchen towel to remove excess moisture.
- Make the Batter: In a medium bowl, whisk together the all-purpose flour, egg, 2 teaspoons of the ground cumin, tomato paste, minced garlic, a generous pinch of salt, and a dash of black pepper. Gradually add the milk, whisking until you achieve a smooth batter with the consistency of pancake batter. It should be thick enough to coat the cauliflower florets.
- Season the Cauliflower: In a separate bowl, toss the drained cauliflower florets with the remaining 1 teaspoon of ground cumin and a pinch of salt. This ensures every bite is flavorful.
- Heat the Oil: Pour the vegetable oil into a deep skillet or Dutch oven until it reaches about 2-3 inches deep. Heat over medium-high heat until it reaches 350°F (175°C). If you don't have a thermometer, a small drop of batter should sizzle immediately when added to the oil.
- Fry the Cauliflower: Dip each seasoned cauliflower floret into the batter, ensuring it's fully coated. Carefully place the coated florets into the hot oil, frying in batches to avoid overcrowding the pan. Fry for 3-5 minutes per side, or until golden brown and crispy.
- Drain and Serve: Remove the fried cauliflower with a slotted spoon and place on a wire rack lined with paper towels to drain excess oil. Season immediately with a final sprinkle of salt if desired, and serve hot.
